Quzi with Temman is a traditional Middle Eastern dish, featuring tender roasted lamb served over fragrant rice. This sumptuous meal is perfect for special occasions and family gatherings, offering a delightful blend of spices and textures.

Ingredients

For the Lamb:


  • ● 1 whole leg of lamb (about 3-4 kg)
  • ● 4 cloves garlic, minced
  • ● 1 large onion, finely chopped
  • ● 2 teaspoons ground cumin
  • ● 2 teaspoons ground coriander
  • ● 2 teaspoons ground cinnamon
  • ● 1 teaspoon ground cloves
  • ● 1 teaspoon ground nutmeg
  • ● 1 teaspoon ground black pepper
  • ● 2 teaspoons salt
  • ● 1/4 cup olive oil
  • ● 1/4 cup lemon juice
  • ● 2 cups water or beef broth

For the Rice(Temman):

  • ● 3 cups basmati rice
  • ● 4 cups water or chicken broth
  • ● 1/2 cup slivered almonds, toasted
  • ● 1/2 cup raisins
  • ● 1/2 cup pine nuts, toasted
  • ● 1/2 teaspoon ground cinnamon
  • ● 1/2 teaspoon ground cardamom
  • ● 1/2 teaspoon ground turmeric
  • ● 1 teaspoon salt
  • ● 3 tablespoons ghee or butter

Preparations Steps

For the Lamb:

  1. Preheat your LG Oven to 160°C (320°F) and select the Steam Roasting feature. This feature combines steam and convection heat to ensure even cooking and juicy results.
  2. In a small bowl, mix together the garlic, onion, cumin, coriander, cinnamon, cloves, nutmeg, black pepper, salt, olive oil, and lemon juice to create a marinade.
  3. Rub the marinade all over the lamb leg, ensuring it is well-coated. Let it marinate for at least 1 hour (or overnight for best results).
  4. Place the lamb in a roasting pan, add the water or beef broth to the pan, and cover tightly with aluminum foil.
  5. Steam roast in the preheated LG Oven for 1 hour 30 minutes, or until the lamb is tender and easily pulls apart. Baste occasionally with the pan juices.

For the rice(Temman):

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, bring the water or chicken broth to a boil. Add the rice, salt, cinnamon, cardamom, and turmeric. Stir well.
  3. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. In a separate pan, melt the ghee or butter over medium heat. Add the almonds, raisins, and pine nuts, and sauté until they are golden and fragrant.
  5. Gently fold the nut and raisin mixture into the cooked rice.

Serving Suggestions

Serve the Quzi by placing the rice on a large serving platter, creating a well in the center. Carefully place the steam-roasted lamb on top of the rice, spooning some of the pan juices over the lamb for added flavor. Garnish with additional toasted nuts and fresh herbs, if desired. Accompany the dish with a side of yogurt sauce or a fresh salad for a complete meal.
